INGREDIENTS
1 egg yolk
1/2 tablespoon white wine vinegar
1/2 tablespoon Dijon mustard
4 sprigs (or so) tarragon, finely chopped
1/2 cup vegetable oil
1 teaspoon freshly squeezed lemon juice
2 tablespoons water
salt
METHOD
Put the egg yolk in a bowl with the vinegar, mustard and tarragon. Whisk to combine and then let sit for 10 minutes to infuse the flavors.
Slowly drizzle in the oil while constantly whisking until completely incorporated. Whisk in the lemon juice and water. Season with salt and chill
