I'm not sure where I got this recipe. I have a suspicion that it comes from "Everyday Food." I serve this as a bed for sesame orange shrimp. It's just a nice little bit nicer than boring old plain rice.
INGREDIENTS
1 cup rice
6 thinly sliced scallions
1 tablespoon toasted sesame seeds
1/4 teaspoon toasted sesame oil
coarse salt
freshly ground black pepper
METHOD
In a medium saucepan, boil 1 1/2 cups water with 1 teaspoon salt. Stir in rice; return to a boil. Reduce heat to a simmer; cover and cook until rice is almost dry, 15 to 20 minutes. Remove from heat. Let stand, covered until completely dry, 10 to 15 minutes.
Fluff rice with a fork and toss with scallions, toasted sesame seeds, and toasted sesame oil. Season with salt and pepper.
