This recipe comes from everyone's favorite naked chef, Jamie Oliver. He suggests it as an accompaniment to his lamb curry.
It's really fun, and easy, to make your own cheese. DO give it a try.
INGREDIENTS
8 1/2 cups (about half a gallon) whole milk
1 cup white wine vinegar
METHOD
In a thick bottomed pan bring the milk to a boil. Immediately remove from heat and add vinegar, stir and let sit for 5 minutes. The milk will begin to curdle.
Pour the curdled milk though a colander lined with cheese cloth. Allow the water to drain, then squeeze the remaining curd into a ball or log and chill in the refrigerator.
