I have such a weakness for chips and salsa. There are so many different variations and I love them all. I think I found this in an issue of Everyday Food. It's great in the summertime when all the ingredients are bountiful at the local farmer's market. All you do is chop eveything, give it a stir and shovel it it.
3 medium tomatoes, chopped
2 jalapenos, stemmed and minced with seeds
1⁄2 medium red onion, finely chopped
2 cloves of garlic minced
2 tablespoons extra-virgin olive oil
salt and freshly ground pepper to taste
Combine all of the above ingredients.
